Who Says Dinner Has To Be Boring?

If someone had told me years ago that one of my favorite summer dinners would be a plate full of fruit, cottage cheese, chia seeds, and unsweetened applesauce, I probably would have smiled politely... and then asked, "Where's the real food?"
Well, consider me a little wiser. This is my dinner this evening.

This plate has become one of my favorite summer meals. It's refreshing, nutritious, really fills you up, and requires no cooking—which is a wonderful bonus when the Georgia summer feels like you're living inside a hair dryer.
Once we pass sixty, we're no longer eating just to satisfy our taste buds. We're eating to fuel the adventures we still want to have. Strong muscles, healthy bones, a sharp mind, and plenty of energy don't happen by accident. They happen one bite at a time.
One thing I've learned on my health journey is this: healthy food doesn't have to be bland, boring, or complicated. In fact, some of the healthiest meals are also the simplest.
And here's another bonus. You don't have to heat up the kitchen, dirty a sink full of pots and pans, or spend an hour preparing dinner. Just wash, slice, scoop, sprinkle... and enjoy.
